Castelnaudary: Canal du Midi's Grand Basin reflects 14th C churches, and a semaphore towers. Home to Cassoulet - a baked dish of white beans, garlic, pork, sausage; and French Foriegn Legion who have a base 2kms away.
Mirepoix. Old Cathar town with splendid center of wood arcades. Visit14 CMaison des Consuls. Jazz Festival.
Fanjeaux. Previously capital of Occitanic Troubadours, and also foundation stone of Dominicans.
Mas d'Azil. Drive through prehistoric cave with Dinosaur museum close by.

Canal du Midi. Unesco heritage site canal, with pleasant restaurants and villages along its banks. Revel. Old bastide town, with large central market. Furniture manufacture was its name to fame, now sadly faded.
Albi. A must see town in the area. Massive red brick fortress Cathedral overlooking river Tarn. Archbishops palace - Toulouse Lautrec magnificent art gallery and museum.
